According to tha late 19th century historians, the foundation of the university of Bologna goes back to 1088, although it is attested that a well-organized urban Studium has been in existence for some time. Hundreds of students poured in from all over Europe, contributing to the cultural, architectural and especialy economic development of the city. In the Middle Ages, the University of Bologna was at the height of its glory. The establishment of similar institutions in Italy and abroad and the 16th century scission between the catholic and the protestant countries undermined the prestigious aura of the oldest European university. Nevertheless, owing to the many scholars and intellectuals who have taught there, the University of Bologna has remained untill today of significant cultural repute, worthy os its nickname - "the Learned". "When you hear about Bologna cookery, bow to it, for it is certainlly praiseworthy. Altrough perhaps a heavy diet, as the climate demands, it is so succulent and healthy, so delicious that in Bologna it is common to live to 80 or 90 years old." This is how Pellegrino Artusi exalts the good food of Bologna in his gastronomic treatise of the 19th century. Praised ever since the Middle Ages by travellers, men of letters and even kings, this cookery won the city its nickname "Bologna the Fat". Emilia Romagna stands at the junction of the north and south of Italy, and at the hub of road and railway connections, Via Emilia, whitch has given its name to a part of the region, constitutes its spinal column. Bologna, the chief town, has recently been reclassified as the best city in Italy for quality of life. The city of Bologna is in a strategic position for making day visits to other
important cities of cultural interest, like: Venice
